So, you all know I don't bake. BUT, I made these cookies the other day and they turned out GREAT! If I can do it anyone can!!!!!:chef: ( Recipe is based on one by Paula Deen)
2 sticks of soften butter
1/2 cup brown sugar, packed hard
1 egg
1 1/2 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon baking soda
2 1/4 cups white flour
1/2 teaspoon salt
1 cup oatmeal
3/4 cups sweetend coconut
melted white chocolate chips ( about 10 oz)
3/4 cups toasted shredded sweetened coconut
cover a cookie sheet with parchment paper and spread 3/4 cup shreadded coconut on it. Bake in a 350 oven for 5-8 minutes. Turning coconut every minute or so until coconut is a nice tan color. Set aside.
Mix 2 sticks butter with brown sugar.
Add eggs and vanilla. Mix well.
Add Baking powder, soda, salt, mix.
Add flour a little at a time and mix.
Add oatmeal and coconut. Mix well. Dough is pretty thick.
Line cookie sheet with parchment paper and make dough into walnut size balls. Put on cookie sheets. Bake at 350 for about 8-9 minutes. Just until the bottom of cookies are a light tan.
Remove from oven and cool. Cookies will be very very crumbly until cool. They firm up a lot.
Melt white chocolate. ( I just did it in the microwave.)
Top cookies with chocolate and sprinkle with your toasted coconut...
After chocolate hardens eat cookies! Great with a cup of tea.
