Betty Greene's Matzoh Kugel
This recipe was a creation of my mom's and not only is a family favorite but was one of her most popularly requested Passover recipes. It can be a side dish or a dessert. Also, it can be served hot or cold.
Ingredients:
5 matzohs
6 eggs
¾ cup yellow raisins
¾ cup sugar
2 teaspoons cinnamon
4 Tablespoons margarine (kosher for passover margarine)
5 large apples, peeled, cored and diced (Rome)
pinch of salt
juice of orange or lemon
Soften matzohs briefly in water. Add beaten eggs and remaining ingredients. Stir well to mix. Pour into a greased 9” square pan. Bake for 45 minutes in a 350 degree oven.
