Bacon and Molasses-Glazed Onion Sauce

4 servings
4 slices smoked bacon
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper, divided
1 1/2 lbs sweet onions, thinly sliced (About 2 large)
1 tablespoon balsamic vinegar
1 teaspoon molasses

Cook bacon in a large skillet until crisp; remove bacon, and drain on paper towels
Heat 1 tablespoon of drippings over medium-high heat. Add onion, and cook, stirring
often, 10-15 minutes or until soft & a bit caramelized. Stir in vinegar, molasses, salt, and
1/4 teaspoon pepper.
Crumble bacon into onions and stir well.
Serve over Steaks or Chops
