1 lb pork sausage(i use bob evans or jimmy dean in a pinch)
3 cups all purpose flour
1 cup stone-ground
4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
6 eggs separated
2 cups buttermilk
1/2 cup unsalted butter, melted
2 cups frozen corn kernels
2 cups vegetable oil,divided
Honey
In a large skillet,over medium-high heat,cook sausage, breaking up into small chunks until no longer pink, about 10 minutes.drain off fat and set aside.
in a large bowl combine flour,cornmeal,baking powder,soda and salt.
place egg whites in a mixing bowl and beat with a beater until whites hold a stiff peak. set aside
in a small bowl whish together egg yolks, buttermilk and butter.Add to the flour mixture and mix with a large spatula until combined. carefully fold in half the egg whites.add sausage and corn;mix lightly. gently fold in the rest of the egg whiltes.
in a large skillet heat 1/4 cup of the oil over medium heat, when oil begins to smoke, pour in 1/4cup of the batter for each fritter.cook 4 or 5 at a time until bottom is browned, about 2 minutes;flip and cook until bottom is browned, about 2 more minutes.
reduce heat if fritters begin to cook to quickly and are still raw on the inside.remove to a plate and keep warm. repeat until all fritters are cooked.
serve with honey
note:
fritters can be kept warm in a 200*F oven for up to 30minutes
