Roasted Red Taters and Fennel

I have never tried fennel before so I searched for a simple recipe to try. I have since made the recipe my own and wanted to share. What I love about this recipe is that roasting the fennel gets it all carmalized and yummy, I just love this recipe!

3 or 4 red bliss taters cut in 1" chunks
1 or 2 large fennel heads (fronds removed)
1 medium sweet onion
1 tsp fennel seed
3 T of good olive oil
good pinch of kosher salt
fresh cracked pepper to taste
chopped fennel frond for garnish

Cut taters and slice fennel vertically into 1/2" slices. Separate larger pieces of fennel. Slice onion into 1/2" rings. Throw into large bowl and add OO, fennel seed, salt, and pepper.

Put into greased baking pan (spray with cooking spray) in 400 degree oven for 40 - 50 minutes, tossing occasionally to brown all sides.

Dish is done when taters are browned, and fennel is tender and carmalized. Good side dish for rustic dinners!
