Fried Okra

Fried Okra

1 Lb fresh okra sliced up
1 cup flour
1 cup cornmeal
salt and pepper
5 eggs, beaten
cooking oil

Heat about 1/4-inch of cooking oil in a frying pan. Combine flour
and cornmeal and season with salt and pepper to taste. Dredge okra
in beaten eggs, then dredge in flour-cornmeal mixture. Place okra
in heated oil and fry on medium heat until golden brown. Stir​
occasionally so all sides get browned. Drain on paper towels.
Dust with paprika if you like.

My family has ethnic-themed dinners once a year, and a few years ago, we chose recipes for a 5-course menu from the giant continent of Africa.

Two of my favorite dishes were fried whole okra pods and fried fava beans. I was surprised to see that all the other recipes posted for fried okra called for slicing the pods.

I can't find the recipes (at least I THINK they're whole pods!) but here's the picture. SO good!

(hey, Keltin and Mama, am I forgiven for not liking corn bread if I like fried okra? :) )
