Italian Mocha Cream Pudding

1 envelope of unflavored gelatin
2 Tbsp. cold water
1/3 c of semi-sweet chocolate (either chips or squares)
1 3/4 c heavy/whipping cream
6 Tbsp sugar (fine grain if you can get it but regular will work too)
3 Tbsp instant coffee or espresso
1 1/2 c milk
2 tsp vanilla
Fresh berries (optional) for decoration

Sprinkle gelatin powder over the cold water in a small dish and let it sit for about 10 minutes.
Melt chocolate (either in a double boiler) along with 1/2 cup of cream, espresso powder and sugar. Incorporate well til smoothe. Slowly whisk in remaining cream and heat til steaming - DO NOT BOIL. Add softened gelatin and vanilla until gelatin is completely dissolved.
Pour in to serving dishes and chill for 4-5 hours minimum or overnight.
Top with whipped cream and berries. Delish!! :mrgreen:
