1 can refrigerated crescent rolls
1 c cashew nuts, toasted
4 to 5 med zucchini, thinly sliced
4 to 5 garlic cloves, minced
1/2 c onion, chopped
1 tbsp butter
1 egg, beaten
Sprig fresh parsley chopped or 1 tsp dried parsley
6 oz Monterey Jack cheese, grated (2 1/2 c tightly packed)

Unroll Crescent rolls into 9" pie pan. Shape into crust, sealing scored lines with fingers. Sprinkle cashews over bottom of crust. Saute zucchini, garlic and onion in butter only until well stirred, heated and slightly wilted. Leave a little undercooked. Pur into crust, Pour beaten egg over all. Top with parsley and cheese. Bake at 350F for 45 minutes or until golden brown.
