Apricot Fool
Serves 6-8

Ingredients:
8 oz. dried apricots (1-1/2 cups)
2 1/3 cups water
3/4 cup sugar
1/4 cup creme de cacao
1 cup heavy cream
2 Tablespoons cocoa

Directions:
Place the apricots, water and sugar in a heavy saucepan and bring to a boil. Lower the heat and simmer, covered, for 10 minutes. Let cool, then puree the apricots and cooking liquid in a food processor. Stir in the creme de cacao and chill in the refrigerator.
Meanwhile, place the cream and the cocoa in a small, chilled mixing bowl. Stir well to dissolve the cocoa. Return the bowl to chill for at least an hour. Then, whip the cream until soft peaks form. Fold the whipped cream into the apricot mixture and place into 6 to 8 dessert cups, bowls or wine glasses. Cover with a napkin and then saran or tin foil and chill well. The paper will help absorb any water that will form and keep it from getting on the fool. Serve. May decorate with dark chocolate curls if so desired.
