this one is simple and easy to make.. make it as you are waiting for the other part of your meal to be cooked
1 Block Feta Cheese
6 Tomatoes
Oregano
Extra Virgin Olive Oil
Jar of Jalapenos
Salt
Preheat oven to 375*F.
Slice 4 tomatoes and share between 2 ovenproof dishes (individual). sprinkle with a little salt.
Finely chop a few jalapenos and sprinkle over tomatoes in both dishes.
Cut the block of feta in half, and crumble each half into each bowl.
Slice the last two tomatoes and place over the feta cheese. Add a few more chillies if desired and sprinkle with oregano.
Pour olive oil over both dishes so ingredients are nicely covered.
Place in middle shelf of oven for about 20 minutes or until cheese is soft and crisping round the sides.
Serve with crusty bread or bruschettas
