Shrimp Balls

Oil for deep frying
1 lb. shelled deveined uncooked shrimp
1 (8-oz.) can sliced water chestnuts, drained
4 tsp.s cornstarch
2 tablespoons chopped green onions
1 tablespoon dry sherry
1/2 tsp. grated gingerroot
1/2 tsp. salt
1 egg, beaten

1. In deep-fryer, heavy saucpan or wok, heat 3 to 4 inches of oil to 375.

2. Meanwhile, in food processor bowl with metal blade, combine all remaining ingredients except egg; process until finely chopped. Add egg; process until combined.

3. Drop shrimp mixture by teaspoons into hot oil (375). Fry 3 to 4 minutes or until shrimp turn pink and balls are deep golden brown. Drain on paper towels. Serve warm shrimp balls with a variety of dipping sauces
