My mom would always make these when they would have friends over to play cards or for appetizers before they went out drinking. lol
4 T. butter or margarine
1 med. onion, chopped fine
1-1/3 cups finely chopped, cooked ham(can sub with 5 cans deviled ham)
1/2 clove garlic, minced
4 T. flour
3 cups sauerkraut, drained and chopped fine
1/2 cup sauerkraut juice
1 T. chopped parsley
1 egg
2 cups milk
Additional flour
Fine dry bread crumbs
In a large skillet, lightly saute onion in butter. Add ham and garlic; brown slightly. Stir in 4 tablespoons flour and cook thoroughly, stirring, about 10 minutes. Add sauerkraut, juice and parsley. Cook 3-5 minutes more. Cool. Form in 1-inch balls. Beat together egg and milk. Dip sauerkraut balls in flour, then in egg mixture, and finally in bread crumbs. Deep fry until golden brown. Serve hot.
These can be made ahead and refrigerated until ready to fry.
