View Full Version : Eggplant Parmigiana

hope this is in the right place. Eggplant is a fruit, isn't it?

1 large eggplant, peeled and sliced 1/4" thick
2 eggs, beaten
1/2 tsp oregano
1/2 tsp Italian seasoning
1/4 tsp basil
1/4 tsp garlic powder
1 tsp salt
1/4 tsp black pepper
1 c flour
1 c dried Italian bread crumbs
1/4 c plus 1 tbsp olive oil (divided use)
1 onion, chopped
1 green pepper, chopped
3 c spaghetti sauce
1 lb Mozzarella cheese, sliced or shredded
1 c Parmesan cheese, grated

Lay eggplant slices on paper towels and lightly salt each side. Let set at least 20 minutes. Mix spices with eggs. Dip each eggplant slice in flour, eggs, then crumbs. Brown in 1/4 c olive oil.

Saute onion and green pepper in 1 t oil. Add spaghetti sauce and heat through.

Put 1/4 " sauce in bottom of greased dish. Layer eggplant, sauce and cheeses, ending with cheese. Cover, Bake at 400F for 20 minutes. Uncover and bake 10 more minutes.

This was one of Mom's recipes. I found more eggplant recipes on the web.

Well Im not sure anyone would look under the fruit / nuts thread though. Heck I just found it! Anyhow, I wonder when they say....


3 c spaghetti sauce


What kind of sauce? I know it would be red sauce but Im thinking it would be a heavy consistancy, no? :unsure:

Alright, found a good Eggplant Parmesan recipe, great! Maybe it could be moved into another forum for easier finding?

Ideally, it should be in the vegetarian section, when we get one. Or it could go in the vegetable section as aubergine, although a fruit, is treated as a vegetable.

That's the problem I had when i posted it, where did it fit?

Remind me to move it when Doc gets the vegetarian section set up.

Love eggplant.I have a good recipe/method.. going to have to make it to get the quantities down then will share.

moved this one to vegetables so all the eggplants would be together.

Awe how sweet... now they aren't lonely anymore!:circle:

Hope they don't get into a discussion on which is better though!
