2 c mushrooms, sliced
1 1/2 c onions, diced
2 tbsp butter
1 pouch Pioneer Country Gravy mix
1 c rice (raw)
4 c water
1 tsp salt
1 tsp thyme
4 boneless, skinless chicken breasts
Cajun Spice
Sauce mushrooms and onions in butter until just tender. Add rest of ingredients except chicken and Cajun spice. Stir until gravy is dissolved. Pour into 9x13" pan sprayed with nonstick spray. Lay chicken on top and sprinkle with Cajun seasoning. Bake at 350F 60-70 minutes until chicken is done and rice is tender.
