Mexican meal in one dish. This is a great comfort food!

1 1/2 lb lean ground beef
1 large onion, chopped
1 small green pepper, chopped
1 mashed clove garlic
1/4 C. salad oil ( I usually just spray pan with Pam instead)
1 can 15 oz tomatoes
1 can 12 oz corn
2 tsp salt
3-6 teaspoons chile powder (-more or less as desired)
1/4 tsp. pepper
1/2 Cup cornmeal
1 Cup water

Cornmeal topping-
1 1/2 milk
1/2 tsp salt
2 Tbsp butter
1/2 Cup Cornmeal
1 Cup shredded cheese
2 beaten eggs

Scald milk with salt and butter. gradually add cornmeal, stirring constantly until thickened. Remove from heat and add shredded cheddar cheese and beaten eggs.
Pour over meat mixture.
Bake, uncovered in 350 oven for 40 minutes. about 8 servings

Sauté the meat, onion, green pepper and garlic in shorting until meat brown
and onions golden. Stir in tomatoes, corn, chile powder, and pepper. Cover
and simmer 5 minutes.
Mix the cornmeal and water and stir into the mixture.. Simmer 10 minutes
more.. Pour into greased 9x13 dish.

Make Cornbread topping.
Pour topping over Meat mixture.
Bake, uncovered in 350 oven for 40 minutes.
