I have a bunch of Guacamole from last night (finally found a cheap ripe avocado source:clap:)

a bunch of other Mexican stuff and a ton of corn tortillas so I am thinking Tostadas mounded w/ refried beans, cheese, guac, sc, topped with crumbled bacon, chopped cilantro some Pace salsa

I'm still clueless for dinner tonight. Saturday was Valentine's Day, and I had to work. Tomorrow is PeppA's BD, and I have to work. I need to do something special for dinner tonight. She is finally starting to warm up to the idea of me buying her a lobster.

this week is gonna sucketh, royally.

i'm working 10a to 6p on a new project, so not only am i busy debugging systems all day in freezing cold and noisy rack rooms (my tinnitus is on overdrive from all of the system fans), but i don't get home until after 7. just in time to help get my boy washed up, edumacated, and into bed. then, around 9, i finally get to decide what to eat.

last night was mexican from a take out joint. it sat in my stomach like a rock all night.

i think i'll go easy on it tonight with some sushi, unless dw decides to make something and keep a plate for me. :glare:

Hey Trish I'm making this (http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1536718) citrus chicken from Cooking Light.... made it once before, really good.... even the kids eat it!
Last time I had no salad to serve it over so I put it over orzo.... today it's going on red leaf and romaine lettuce.

I had a big bowl of jalapeno with smoked chicken soup about an hour ago and I might just skip dinner now. Which is fine by me.

We finally figured out tonights dinner! DW walked to the store to pick up some fresh green beans and a roaster chicken. Gonna make the roaster, green beans sauteed with mushroom, and taters tossed with spices and roasted in the oven.

OUT OF BACON?!?!?! That's....not allowed to happen at my house! If someone opens up the last 4 pound package of bacon in the freezer and takes one out and doesn't tell me....well...let's just say....the :shitHitsFan:

Agreed. There's simply no excuse for running out of bacon. It freezes so well, too.

I've decided on wienies and beans. I'm going to brown up some sliced hot dogs, bacon (Mav :wink:), onions, then pour in a can of Bush's. And try out plating it on buttered toast like Miniman mentioned a while back. I've got a little bit of onion gravy leftover from the other night I think I'll throw in, too.

And I'll get you some extra dessert if you'll post that Split Pea Soup recipe! My neighbor loves Split Pea Soup and asked me if I would make it for her and her hubby. I bought the beans, but I don't have a TNT recipe yet. I'd love to use yours!

Well, no lobster here. PeppA ended up buying some steaks, 5 lbs of shrimp, and a bag of charcoal. At least I finally got to cook some steaks MY WAY instead of boot leather.

yeah they were good... slow in a CI skillet with some chili powder and brown sugar could have eaten them with a spoon

We had a simple meal tonight. A marinated rib eye with my mushroom topping, steamed asparagus with a white truffle oil vinaigrette, red Blisse potatoes roasted with rosemary and garlic. The marinate was soy, balsamic vinegar, Worcestershire sauce, olive oil and juice from half a lemon.

As much as I like complex flavors and complicated recipes, sometimes, the simplest things are the best. Take the steaks I had for dinner tonight. Nothing special. PeppA bought three THIN NY strips, and four hefty, thick sirloins. I seasoned all with salt, pepper, and garlic powder. Grilled to perfection (at least, the sirloins were, nice and medium to med-rare, the strips were med-well).

I did manage to save one of the sirloins. I'll use it tomorrow for lunch. I'm thinking homemade Lo Mein.

Thanks guys but it really is simple, nothing more than a bit of planning ahead involved. No major hard to find ingredients at all, really. It was good though and simple meals can be good and fast too, this took about 30 minutes to do. So much for Rachael Ray and her 30 minutes meals.

i've gotta stop eating just before going to bed. i wake up with a full stomach, burping as if i've just finished dinner. and i don't sleep well, the 3 or 4 hours that i may get.

last night around 9:30, i ran out and picked up dinner from a local take-out steak and chop place. it's a great little joint that used to be a pizza parlour, but spanish guy bought it, tore out the pizza ovens and put in a huge grill. they serve really good steaks and chops and other suff with sort of a spanish skew to them.

last night, i had the "country platter", which was a grilled pork chop, grilled boneless chicken breasts, and the most unbelievable grilled fresh chorizo that you've ever tasted. sides were sauteed peppers and onions, and rice and beans.
