ok i made a different version last night and they turned out great

3lbs potatos
1 head of garlic - roasted
1/2 cup of 1/2 & 1/2 cream(heavy cream)
freshed cracked black pepper
1 can chicken stock - divided in 1/2
1/2 cup sour cream
butter

cut potatos up, boil in water with 1/2 can chicken stock.

while mashing potatos, add the other ingredients. add more of less of them to get the consistency that you like

Interesting Bam... boiling in stock and S.C. are things I have not thought of for the mashed potatoes bet it gives great flavor

I usually use sour cream and butter while mashing, but I haven't boiled the spuds in stock either. And the garlic being roasted sounds like a good idea. I don't like it minced and added raw, it's still too strong for me. I'll be giving these tricks a try, Jeff. Thanks.

I've used 1/2 & 1/2 as well as sour cream but never tried it with the stock before but will next time around. I also make then with mozzarella and Parmesan cheese before then finished them off in the oven to melt the cheese. Of course I use butter too as I have to have butter in almost everything with potatoes.

Watched Ina Garten make her mashed special potatoes the other day for Jeffrey and she used buttermilk and said it added tanginess.
