Here is a simple recipe I have made in camp.

In a 12" DO, add:

1-2lbs pork loin strip
1 head or so of garlic
1 large red onion
Couple apples, sliced
Couple 3 or 4 red potatoes, quartered
six pack of nice pale ale or stout
Large jar of sauerkraut

Sprinkle pork with salt and pepper
break up, shell and coarsely chop garlic
Slice onion in thin slices
Quarter apples and potatoes
Toss everything in a DO. Pour a beer over everything.

Cook for hour to 1.5 hours. Try 8 briquettes on the bottom 14 or so on the top to start. Cook till pork is done. enjoy with res of beer from six pack.

If I trim spare ribs to St. Louis style, I use the rib trimmings in this dish. Tasty!

I love making this. I do mine in the inside oven though.
Great Sunday dinner without dedicating a whole lot of attention.
The only thing missing is a nice loaf of jewish seeded rye and butter.

My mom used to fix spare ribs and sauerkraut on the stove top, and I loved them.
