I got this recipe from one of my TOH magazines a couple years ago. It's TNT.

Bacon-Feta Chicken Rolls

Ingredients:
4 boneless skinless chicken breast halves
8 bacon strips, cooked and drained
1 cup (4 ounces) crumbled feta cheese
4 roasted red pepper halves, patted dry
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 teaspoon Italian seasoning

Directions:
Flatten chicken breasts to 1/4-in. thickness. Top each with two strips bacon, 1/4 cup feta cheese and a red pepper half; sprinkle with salt and pepper. Roll up starting with short side, bringing the ends to meet. Tie at 1-1/2-in. intervals with kitchen string. (I use toothpicks)
In a skillet over medium heat, brown chicken on all sides in oil.
Transfer to an ungreased 8-in. square baking dish. Sprinkle with Italian seasoning. Bake, uncovered, at 350° for 35-40 minutes or until chicken juices run clear. Yield: 4 servings.

I've made something similar, except I coated and deep fried it. Haven't tried feta before tho...will have to do sometime soon.

Wow, that looks fabulous, barb!

(anything that has the word "bacon" in the title gets my attention, but I like all the rest of the stuff in it, too!)

I think it needs it's own catagory! LOL!
