View Full Version : Mushrooms Stroganoff Pasta

5-6 Tablespoons Olive Oil
6 large button mushrooms (sliced, including stems)
1/2 small onion
1 clove garlic
1 teaspoon flour
1 cup milk
salt and pepper to taste
1 bullion cube (chicken flavor, optional)
handful of chopped parsley

Pasta for 4 people*

In a sauce pan add oil and chopped onion and saute until onion becomes glossy. Add sliced mushrooms, bullion cube and the grated garlic, mix and let simmer together until mushrooms changes color.
Add the flour and mix well, adding milk little by little. Salt and pepper to taste and cook until sauce is thick. If the sauce is too thick add more milk, just enough to make it runny**

Bring water to boil, add pasta and cook for no longer than 12 minutes. Add pasta to the hot sauce and mix until pasta is coated with sauce.
Sprinkle with chopped parley.

Note:
* This is how I measure pasta for one person. Position the tip of your index finger to the base of your thumb. Whatever pasta you could fit in that space is enough for one person.
** If you like your pasta with a lot of sauce you can add 2 teaspoons flour and more milk.

cuis, my slovakian (from just north west of the carpathian mountains, near the tatras) mother in law used to make something just like this. oddly, she also mixed in cottage cheese just before serving. i think cottage cheese was the closest thing to what she used to make when she was young. i can picture a more flavourful, salty soft cheese in it, but cottage? gack!

i don't really like cottage cheese, but i think without it like your dish, i'd love a big plate!

My boyfriend said the mushrooms gives the pasta a nutty, earthy taste.
His son is very picky eater, he loves pasta and mushrooms but not mixed. I was surprised yesterday when he said he want to have the leftovers for dinner today.

BT... Farmer's Cheese is what we used to make in the old country. For many years I thought the Cottage Cheese was it... then I discovered that Farmer's Cheese does exists :)
I don't like it in pasta but we have a lot of other dishes that we could use it.
Oddly enough I love plain pasta with feta cheese and sugar :wub:


I forgot to mention, this dish could also have meat in it if you like, sliced very thin and cooked together with the mushrooms.
And if you add water instead of milk could be a vegan recipe.
