1 Pineapple, cored and coarsely chopped
1 lemon, sliced thin and quartered
2 apples, coarsely chopped
1 Habanero pepper, stemmed, seeded and chopped.
4 cups sugar
5 Tbl brandy

Heat the pineapple, Habanero and apples in a large pot.

Blanch the lemons in boiling water for 5 min or so.

Add the lemons and sugar to the fruit and cook on low for about an hour or hour and a half. Skim the foam.

Place a tablespoon or so of brandy in each (250 ml) canning jar.
Add fruit mixture to each jar and seal.

Makes about 5 jars of sauce.

Cool, what does this go best on? Beef, pork, chicken all of the above?

yes yes and yes..lol

comes out more like a jelly than a sauce but we can adjust for that.lol
