Here’s a super easy Beef Vegetable Soup recipe I threw together that we absolutely adore. It’s hearty and tasty, and it only gets better as it sits in the fridge. Left-overs are outstanding with grilled cheese.

But remember, this is a simple recipe that comes together fast and tastes great. Naturally, there are longer, more labor intensive ways to do Beef Vegetable Soup.

Anyone can make this, and it tastes great! If you know someone that claims they can't cook, give them this recipe. If you can cook, then try this anyway; you'll be amazed at how simply and quickly you can get a great Beef Vegetable Soup to the table.

Keltin's Easy Beef Vegetable Soup

Ingredients

1 lb Ground Beef
4 cups Frozen Mixed Vegetables (or 2 cans “Veg-All (http://www.vegall.com/)” drained of liquid)
1 can Tomato Sauce
3 cups Beef Broth
1 Tbsp Italian Seasoning
Salt and Pepper to Taste

Procedure

For this, I used 2 cans of Veg-All (drained).

In a medium sized pot, add beef broth, tomato sauce, vegetables, and Italian seasoning. Bring to a boil.

As that is coming to a boil, brown the ground beef, but don’t break it up too much – let it form into chunks as it will. Once brown, drain and then add to the pot and stir well to incorporate.

Once all is in the pot, let it come to boil and then reduce heat to low and simmer for 30 minutes.

Notes

At a glance, this is simplistic, but the flavor is extraordinary. You could easily serve this to guests and they’d think you’d slaved away for hours on it. A wonderful soup that you can prepare quickly for those biting cold winter nights, and one that tastes even better the next day!

Looks and sounds good Keltin.
I do something almost exactly the same only instead of beef broth, I add 1 packet of brown gravy mix to the beef while it's cooking, then go from there.

Sounds good Keltin. I'll try this one for sure. :thumb: I'll have to think about the gravy instead of beef broth. Just doesn't sound right, but many times things like that surprise me. 1st I'll do it Keltins way though. Thanks guys!!!!!

Looks delicious and warm! My mom used to make a soup very similar to this. I don't think she added Italian seasoning, but that can only make it better! I'm gonna try this one soon!
