This year's bread is a blend of freshly ground hard winter white wheat and KAAP, with 5% honey, 66% hydration. Made 63 Loaves. Right now, the WFO has been fired, ashes removed and the temps are equalizing. Ready to bake in about 15.
First pic is of the 37# of wheat that was ground about 3 hours earlier, soaking in 37# of water and all the salt for the recipe

you're not kidding, wow!!!
who eats all of that delicious looking bread, uncon? i mean, i'm a bread person, but even i could only get through about half of that this weekend, lol.

Bucky, after I'm done baking, we go out and deliver it to friends and family. I think I kept track one year; it was about 120 miles round trip. We've been doing this for about 25 years :) As I learned more about baking, I figured out how to spread the chore over two or three days, but in the beginning I used to do it all in one day. Fewer loaves then, of course. Did 63 this year.
