Soaking dried beans?

I always put a cover on the pot when I soak dried beans overnight.

I don't know why I do and I always wonder if I'm supposed to.

Anybody?

Hmmmm. I always do, too. Maybe to keep the bugs out!! The last beans I made for chili I quick-soaked. Two minutes boiling on high (without a cover) and then cover and let sit for one hour. Change water and cook until done. These were tiny little beans and only took about an hour to cook. They turned out great.

I do the quick soak, too. Boil for a bit, let sit. Then after awhile rinse and cook. The only reason one would cover beans that are sitting out is to keep stuff from getting in the pot.
or someplace to put the lid of the pot...

I also cover the pot when soaking overnight. I figure that it keeps the dust out and also assorted unwanted critters.

We have a tall, leggy Labrador capable of reaching ANYTHING on a counter top. I cover soaking beans and set atop the cupboards (he can't climb a ladder, yet). The thought of a dog ingesting a pound of beans is scary.
