I want to make this, and I bought a frozen pie crust already in the aluminum foil pan.

Should I thaw the pie crust before filling it?

Eggplant and Hamburger Pie (from Cooks.com)

1 9" deep dish unbaked pie shell
2 cloves garlic, minced
1/4 c. butter
1 (8 oz.) can tomato sauce
2 c. cubed, peeled eggplant
3/4 lb. hamburger meat
1/2 c. finely chopped onion
1/4 tsp. oregano
1/8 tsp. pepper
1 c. shredded Mozzarella cheese (use half in recipe & half on top)

In skillet, melt butter over medium heat. Add eggplant. Cover and cook for 5 minutes. Remove eggplant; set aside.

Add beef, onion and garlic to skillet. Cook, stirring often until beef is browned (about 5-7 minutes). Drain grease from skillet. Add tomato sauce, oregano and pepper to skillet. Cook over medium heat, stirring constantly (about 5 minutes). Stir in the eggplant.

Remove skillet from heat. Let cook for a few minutes while oven is preheating to 375 degrees. Stir in 1/2 of the cheese. Spoon the mixture into the pie crust.

Bake 45 minutes or until pie is golden brown. Sprinkle the remainder of the cheese on top and bake 2-3 minutes longer until cheese is melted. Cook 5 minutes.

Preparation time 20 minutes. Total time 1 hour and 10 minutes.

probably won't matter a whole lot -

I've found thawing them sometimes avoids the inner soggy layer - ie the crust cooks through quicker. but I also suspect being afflicted by the 'soggies' is likely more due to how 'wet' the filling is/becomes during the bake.....

ya'gotta try it per directions first. tha

It's not going to matter..you're cooking it for 45 minutes. Sounds wonderful, almost like moussaka.

Yes, VB, in fact, I was JUST thinking that next year, I'll make it with ground lamb!

My little Ichiban eggplants are SO sweet!
