Sure it looks incredible. I mean essentially it is bacon wrapped sausage wrapped bacon. Sounds awesome. But I have to tell you it just doesn't live up to the hype. I did one on SB Sunday.

I mean this looks awesome:

How can you go wrong with 3.5 pounds of slow cooked pork fat with some cheese, garlic and shallots thrown in?

But in the end it was just not as good as it looked or nearly as much as it was hyped. The bacon on the outside was friggin awesome but the rest was pretty blah. I make two smoked fatties (sweet apple fatty and a cheese stuffed sage fatty) that I would put next to this any day.

Nevertheless, if you want to check the process out you know I took a boatload of pictures. So in order to get in under the picture limit I think I will post some teaser pics here and just link back to the writeup. What if you used hamburger that was spiced up some..instead of sausage? Think it'd be better?

That looks amazing. Excellent job on lacing the bacon! :respect:

Heck, even if it wasn't all that in taste, it had to be worth it just to get those incredible pics!

Maybe. The bacon idea on the outside is great. But the bacon in the middle doesn't do much for it. It's just a fatty wrapped in bacon.

The bacon weave I will use in the future because the bacon on the outside was incredible. One of my buddies, a follower on my site, did the bacon weave around a couple of pork tenderloins tied end to end and it was friggin fabulous. I mean incredible!!! I will do that soon. I'm telling you it can't get warm fast enough. I'm only grilling about twice a month right now. But I have so many things lined up that I want to do:

Rotisserie Duck
Bison Steaks
Ostrich Steaks
Lamb Chops (with my dad on guy night as he hasn't had it yet)
Bacon Weave wrapped pork loin
Seafood - all kinds of seafood
Stuffed peppers, tomatoes, onions

I was planning on trying this when the snow recedes a this spring. I was thinking of using the hot Italian Sausage and filling with Pancetta or Prosciutto and perhaps some spicy cheese perhaps a hot jack cheese. Oh and GF I saved your site to my favorites. :thumb:

I did these a while back, and they were a huge hit! Used hot italian sausage, and added chopped jalapenos and horseradish cheddar. Sliced and served on hot "Grands" biscuits-both of them disappeared in no time!

I could maybe see doing that with Chorizo instead of sausage.

I may have to do the bacon weave thing sometime.

Loves me some Chorizo. But Chorizo doesn't love me. Tears me up the next day!!!

We did ours with Johnsonville Italian Sausage. Probably should've gone with a bulk sausage rather than johnsonville. But it still just didn't taste as good as it looked....
