1 (9 x 13 inch) pan cooked and crumbled cornbread
1-1/2 cup mayonaise
2 cups celery, diced
1 green pepper, seeded and chopped
3/4 cup green onions, chopped
1 - 5 oz jar green olives and pimentos, drained, rinsed and chopped
3/4 cup pecans, toasted and chopped
2 large tomatoes, chopped
1 teaspoon sage
Pepper to taste
10 slices bacon, fried crisp and crumbled
1 jalapeno pepper, seeded and chopped
Refrigerate 3-4 hours before serving.
Okay, now you're talking, simplicity!
I've never been a fan of cornbread, but this looks wonderful! Would be a FAR better accompaniment to BBQ, in my opinion!
Copied and saved for the next smoke cook!

I'd really, REALLY have trouble with this one.
Between nibbling on the cornbread as I crumble it, and bacon - bacon, bacon, bacon, where's the bacon, I'd munch, leaving maybe a couple of pieces, and then the pecans...
well I guess I'd be creating my own recipe and it'd probably taste like crap.

I make this mostly when I'm grilling, especially for pork or chicken. I get tired to the usual macaroni/potato salad dishes. The bacon seems to fit nicely - maybe it's because I buy the cheap stuff and it shrivels up a lot:smile:
