that this coming "weekend" for me (Monday and Tuesday), she expects me to smoke a pork butt, since I've got a chainsaw to cut the wood with.
I'm thinking, is that she wants my Posole made with smoked pork. I wouldn't mind cooking several pork butts, so that we can have pulled pork sandwiches, and lots of leftovers for Posole, and maybe even freeze some pulled pork for "later".

If you're going to fire that beast up, I'd say go all out!

Don't forget to make some pulled pork chili!
And take lots of pics :^)
Thing is, when I light the 'big' grill (500" but still small by many standards) I can't see making that fire for just one or two meals. It's all around inefficient.
And if the grill(s) didn't look like this:
