2 pounds lean ground beef (or a pork and beef combo)
1 small onion, diced
1 small onion, sliced
3 garlic cloves, diced
2 eggs
1.5 C seasoned breadcrumbs
S&P
1/2 T dried oregano
1/2 T dried thyme
2T olive oil
1 28oz can crushed tomatoes (divided use)
1t oregano for sauce
1t thyme for sauce
1t granulated garlic for sauce
S&P
4 peeled and quartered idaho potatoes
Caramelize the diced onion and garlic in the olive oil. Add the first oregano and thyme. Remove from heat.
In a large bowl, blend the beef, eggs, breadcrumbs, 1/3C crushed tomato, S&P, caramelized onions and garlic. Don't overmix. Shape the mixture into a loaf and place into a casserole or roasting pan. Sprinkle the sliced onions and quartered (lengthwise) potatoes around the loaf. In the bowl you mixed the meat in, combine the remaining crushed tomatoes, a full can of water, the second oregano, thyme and granulated garlic. S&P to taste. Mix well. Pour around meatloaf, onto potatoes and onions. Cover and bake 350 for 1.5 hours. Remove foil and bake another 20 minutes. Broil for 5-10 minutes to crisp the top.
