Hi everyone.
Anyone make cherry jam, in particular does it need pectin?

generally, yes.
depending on the strain, some - notably the sour types - have some pectin. sweet cherries usually don't have enough natural pectin to gel.

Here's one Ray.
Traverse City Michigan Cherry Jam
5 c pitted tart cherries
4 c sugar
1 T butter
1 T cornstarch
3 oz box cherry Jello (1 packet gelatin/flavoured jelly)

Mix cherries and sugar and allow to sit overnight.
Next day, stir in the cornstarch and boil for 10 minutes, stirring constantly.
Add Jello packet, mixing well.. then stir in the butter til blended.
Cook for another minute (it will be thick).
Pour into 6 8oz. sterile jars.
Can be frozen too.
