I didn't know that about scallions and green onions, Buzz. I've always used the terms interchangably - I like knowing the difference!

Awesome information! I've always used scallion and green onion interchangably as well. Technically, I suppoes I still can since the only difference is age and strength of flavor. I prefer the stronger flavor, so I guess "what the Captain means is" Green Onions! :lol:

shallots are indeed different.
but as for green onions / scallions / spring onions
. . . . just keep in mind, that is only one writer's opinion. usage varies.

Shallots are great and much easier to find these days, and the ones I do find in my supermarket are much better than those available only a few years ago.

i've noticed a lot more selection of the various types of onions in the past few years. many markets near me sell onions in a number of stages from straight scallions to completely bulbed onions with the tops tied into a knot. not just the dried out flaky skinned ones in a mesh bag.
i've seen the term spring onions and young onions used interchangeably for the middle stages of bulb-osity as well.
