Another birthday at work. They are now putting in 'orders' for their birthday cakes months in advance. Everyone has let me know just what their favorite cake is. Stephanie wanted carrot cake - with cream cheese frosting.

Ingredients

Combine all these in a large bowl:
1 cup sifted flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup chopped walnuts
1/2 cup raisins
1 1/2 cup shredded carrots

Combine all these in another bowl:
1/2 cup sugar
1/2 cup brown sugar
2/3 cup vegetable oil
2 eggs
1 tsp vanilla

Add the liquids to the dry, and mix completely.

Bake at 350F for 30-35 minutes.

This makes one 9" square or one 10" round layer. Make as many batches as you need layers.

Fill & frost with cream cheese icing, and press walnuts into the sides.

While I am not a real big fan of sweets or desserts, Sage, carrot cake has always been on my list of top dessert.
This looks amazing dear. I'd eat a piece right now! lol

If you make this, make sure you line your pan with parchment, and butter & flour . The cake is so moist that it will be difficult to remove if you don't line the pan.

Also, if you use 8" pans, two batches will make 3 layers.

That looks Good enough to eat, you are killing me here. I trying to diet and it is taking a lot of will power not to try (make) this cake, I want it bad.

That is so beautiful!!! I have never been crazy about carrot cake, but I do believe I would try this one :) Yum!

Thank God I know how to bake attractive looking bread, because I need some training in cake decorating. I took SS's recipe, added Suzi's crushed pineapple, baked it in a 9x13 dish, cut it in half, and learned WHY you don't do that when you're going to put icing on a cake (a pair of 8" cake pans is on the shopping list). It made a mess of my nice cream cheese icing, but it's hidden with the walnut crust. FWIW, it tastes delicious in spite of the looks.

Thanks Peeps for asking what I was fixing to ask myself. Was showing my daughter the recipe this afternoon and I to, thought I had missed the icing recipe. Had already saved in my favorites when it was first posted and was pulling it up for my daughter to look at. This will be made soon. Thanks again, SS....:applause:

We cannot expect SS to give up all of her secrets, so I'll post my third generation cream cheese frosting recipe for those that might need one. It's actually the same one I use to frost my cinnamon rolls, just different amounts of the same ingredients.

Cream Cheese Frosting


1 pkg. 8oz. cream cheese
1 stick butter or margarine (room temperature)
1 tsp. pure vanilla extract
1/2 tsp. pure lemon extract or zest from one lemon (optional)
2 C powdered sugar

Using an electric hand mixer or food processor, combine butter, cream cheese, vanilla and lemon extracts until well mixed. Slowly add powdered sugar until combined. You may add a little milk to thin if necessary for spreading.

OMG!

DW suddenly got a hankering to bake. She started by baking a Duncan Hines box cake and that went well. She shared it with the neighbors and they loved it. One of the neighbor’s got to talking and said they were craving Carrot Cake in a big way.

DW and I both love Carrot Cake (it’s my favorite cake), so DW asked me to find her a recipe online for a good one. I immediately told her I knew the one! This one!

I showed her the pics, and she was gung-ho.

She went and got the stuff we needed from the store (including 2 cake pans - we had none since we don’t bake). And then we set about to making this beauty together.

It’s really not that bad to make. I dirtied up a lot of dishes doing this, but by golly:

I BAKED A CAKE!!!

From Scratch - Including the Icing from scratch!!

I used Joev’s recipe for the icing. Very easy to do and extremely tasty.

Now that it’s all said and done, and we can eat it…….WOW! This is an incredible cake. The penultimate Carrot Cake! I’m so going to hurt myself now with this cake. Can’t wait for the mornings to come when coffee is fresh and the cake is waiting.

Thanks a million SilverSage, I’ve finally baked a cake thanks to you! This is actually the first cake of any kind (box or scratch) that I have ever baked, and it just doesn’t get any better than this!! :clap:

Oh man, that's a beautiful cake, Keltin. Even with an upset stomach, I am craving a bite of that. I've got a bunch of carrots in the frig. I think we should have one of those, for sure. Tomorrow. Or the next day.

oh..its very wonderful, although its not looks like a carrot cake for me its look like sanz rival. I hate carrot but with that look and recipes maybe i would start to love carrots now joe..thanks
