Pan-roasted Grape Tomatoes

This is one of the sides for a couple dishes on our new menu. Prep is basically pretty easy. The quantities listed here should yield about 4 servings, or if there's a vegan in the house, 1 serving.

EVOO
1 pt grape tomatoes
1 shallot, julienned
2 t garlic, minced
Herbs de Provence, to taste (buy the mix or make your own)
salt and pepper to taste
splash of white wine

Preheat the broiler to the highest setting. Preheat a 10" skillet, something that can safely go in the oven (cast iron is great). Heat the skillet until it gets smoking hot. Swirl in enough EVOO to lightly coat the pan. All at once, add the tomatoes, shallots, garlic, and seasonings. Shake and toss the pan (or stir with a spoon). Once the tomatoes begin to caramelize a bit, place the pan in the broiler, close to the heat. Check after only 2 minutes. You want to tomatoes to be browned, but not burned or completely mushy. Return the pan to the stove, and deglaze with a splash of white wine. Taste for salt, add more if needed.

Granted, this is the dead of winter. Later this summer, when everybody has gardens full of vine-ripe tomatoes, this ought to be killer!

Love tomatoes, and the grapes are the only good ones in the store right now.
This looks good.
