Herbed Roasted Pork Loin with Parsley Shallot Sauce

I didn't have any fresh herbs besides oregano (which I used on the meat) and parsley (for the sauce) and it turned out beautifully! The dijon in the sauce was SO good!

I can't wait till I have all those herbs fresh in my garden!

Served with baked potato (I DO have fresh chives, too) and Balsamic and Parmesan Roasted Cauliflower. Also delicious!

Wow....I'm going to try that sauce. I picked up a small cry-o-vac'd piece of pork for this week's menu that says Pork Roast on it, but I'll just bet that sauce would be great on it. :thumb:
