Greek salad
Peel, seed and slice cucumbers
cut tomatoes into wedges, seed
dice onion
dice red pepper ( can use green but red is much better)
Mix all the veggies.
sprinkle with salt, pepper and oregano
pour some white vinegar and olive oil over the top of the veggies
Mix well.
Feta and olives may be added or served on the side.

You don't use lettuce in your Greek salad, Trish? I can live with that!
But as far as I'm concerned, the feta and black olives are mandatory!!! YUM!!

I love Greek salad! :chef:
Last nite at the Super Bowl party they had some. Now, they added dried cranberries & some hard yellow candy - which that part I found exceedingly strange. Being longer in the tooth, especially, I worried about breaking my teeth. A needless distraction in that salad. :ohmy:

I love the Greek recipies, too. My sister is married to a Greek, and lives just out of Athens. I just got back from spending a month with her and her family, great trip.
