SO glad I didn't serve it for Christmas...... Picked off what I could for slicing for dinner..... I don't even want to deal with the rest, but there is a good amount of bits of meat left on it..... 3 bones..... LOTS of fat.... soup probably not the best idea unless you like ham-grease soup.
WHAT on earth do I do with that??? I'm going to freeze the whole thing until I can find a good idea.

Suzi, would ham salad be out of the question?

Trim off as much of the fat as you can, grind up the ham, add minced dill pickle and onion, mix with mayo.

It's one of my FAVORITE sandwich spreads!

My mother used to add hard boiled egg, but I don't, since I never could taste it in there.

I would go for trimming it as well. You could then turn the borns into stock and skim off the fat before using the stock in soup.

I think I would make my favorite comfort food, Ham and Beans.

Perhaps you could blanch it in boiling water for a few minutes, rinse & drain.

Or, dice it up and use it for spaghetti carbonara (cutting down on any additional oil).

Another way to go w/ the leftovers, is to bury it in cheese & heavy cream, like this ham & cheese cannelloni made w/ eggroll wrappers.
