View Full Version : Smoked & Roasted Garlic Mashed Potatoes Bam Style

2 heads of garlic - roasted and smoked(cut in half, put in tinfoil with olive oil,sea salt and fresh black pepper)
roast in smoker until garlic has turned brown...be careful not to burn

couple of pounds of red potatoes ( i keep skin on)
1 can chicken stock (can is ok)
sour cream
butter

everybody knows how to make mashed potatoes...

what i do is melt my butter in a different pan and add the garlic...

when the potatoes are mashed i add them and enough sour cream and chicken stock so i get the consistancy that i desire

mix well and enjoy

oh i have a few...

now if i could figure out where all those papers are that i jotted them down on ended up, there would be more..lol

Bam, do you close up the foil, or set the halves of garlic heads on the foil and keep it open as they cook?

I can't believe it, but I don't think I've ever smoked garlic heads! Could be used for a BUNCH of things!

i keep the foil open, and make a little "dish" so that the oil doesnt get out

will post a pic as soon as i find it

I have actually made these a few times and they are good too. I often roast garlic with other dishes as well. Love the stuff even infusing garlic into butter rolls to use on steaks etc.
