using frozen egg whites.....

ok so someone very sweet and wise out there in cyberspace told me long long ago to freeze my egg whites for another day when i use yolks.

the day has come... I only need whites..... but they are a frozen mass.... lol how much do I chip off to make 3 whites worth? I know 1 whole egg is generally 1/4 cup.....

or should i just not bother and use some fresh eggs.....

I use frozen egg whites at work all the time, however, we defrost the entire half gallon for use, rather than breaking off bits. If I were you, I'd defrost all of it and simply make scrambled egg whites for breakfast tomorrow. Use fresh for what you need now. Next time when you have to freeze egg whites, put the whites, sans shells, back into a clean egg carton or clean ice cube tray. That way you can have the number you need when you need them. It's best to let it come fully defrosted before you try to use it.
