1 lb ground beef
2 T corn oil
1 medium onion-chopped
1 each green and red bell pepper-chopped
1 small sweet potato-peeled and cut into 1/2" pieces
1 clove garlic-minced
1 T chopped parsley
1 t salt
1/2 t sugar
1/8 t cumin
3 c beef broth
1 small zucchini- sliced into 1/2" pieces
1 c corn
2 T raisins
1 t tabasco sauce
1 small pear-cut into 1" pieces
6 c cooked rice
Heat oil in large skillet or dutch oven,
Add beef and onion, cooking thoroughly.
Reduce heat and add peppers, sweet potato and garlic, cooking til tender.
Add parsley, salt, sugar and cumin and continue cooking for about a minute to blend flavours.
Pour beef broth into skillet, then add the remaining ingredients (except for the rice).
Simmer for 10 minutes, then serve over rice.
