Apple Nut Cake
1-3/4 cups sugar
1 cup oil
3 eggs
Mix and then add
2 cups flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
Mix and then add
2 cups diced apples (4-5 apples) I never measure the apple pieces. The more you put in, the moister the cake)
1 cup nuts
Grease and flour 9 x 13 pan. Bake at 375 degrees for 35-40 minutes.

I hate to tell you, sis but this is my mom's apple cake, too! lol
Her friend, Mrs. Gross made a variation:
One can also add 1 tsp vanilla and 1 cup raisins.
It can also be baked in a tube pan.
It can also be baked at 350 degrees for 55 minutes to an hour.
My mom used rome apples--a nice baking apple. What kind of apple did your mom use?

I have no idea what kind of apples she used. She made it for my 50 something birthday and I've loved it ever since, only because she wasn't a baker and wanted to make me something different. lol The one time I made it I think I used Gala because that's what I had on hand. I haven't had it since.......
