We've bought Honey Baked Hams and always enjoy them. So thinly sliced and treated just right that they melt in your mouth.

Any chance of making something like this at home? How do they slice it so thin and leave it on the bone? How about baking instructions?

Those spiral cut hams are done by a machine.

To do a ham at home you can cook a whole ham, then place it in a stand toslice from the thick end.

I like the typical recipes, studded with cloves and all....maybe some sauce to go with it.

Here is how I've done it a few times. This is fairly simple to do and other things such as studded cloves or pineapple rings can be added if you wish.

Baked Ham

Ingredients
1 (10-pound) bone-in shank-half ham (not pre-cooked)
2 tablespoons Dijon mustard
3 tablespoons honey
3 tablespoons brown sugar

optional:
Cloves
pineapple rings

Directions
Preheat oven to 325 degrees F.

Place ham in a roasting pan, preferably with a rack. Roast uncovered to an internal temperature of 140 degrees F as measured with an instant-read thermometer.

Remove from oven and increase oven temperature to 425 degrees F.

Remove the rind except for the part around the bone end and slash slits in the fat. Combine mustard, honey, and brown sugar, and brush over the surface.

Return the ham to the oven and bake to an internal temperature of 160 degrees F, about 30 minutes.

Remove from oven and let rest before carving.

Prep Time: 15 min
Cook Time: 3 hr 30 min

Ours usually comes pre-sliced and we add in cloves, pineapple, brown sugar and honey. I don't keep exact measurements, though. I think around a half a cup of brown sugar lightly packed to 1/4 cup honey. I then start adding in 1Tbs. of the pineapple juice to the brown sugar/honey mixture until it gets to the desired consistency to brush on easily.
It's good and we enjoy it, but I would take a Honey Baked ham in a heart beat, LOL!

One of the keys to the flavor of Honey Baked is their own low salt cure. The cure they use is much higher in sugar and lower in salt than what you can find in the store. Unless you're up to curing your own ham, this presents a problem in duplicating theirs.

As far as the glaze, it's primarily brown sugar & honey. Stay away from the pineapple juice if you're trying to duplicate HB (although it's real good with ham). It's too pronounced in flavor. Ditto for any strong spices.

Here's the closest recipe I've ever found. Remember that the hams you buy in the grocery are already cooked. You're just warming it and glazing it:

Honey Baked Hams are basted in fruit juices and then glazed with a mixture of brown sugar and honey. Here is a copy cat recipe from Family Circle Magazine.

1/2 spiral cut smoked ham (http://www.recipezaar.com/library/ham-247) (about 7 lbs. fully cooked)

1/2 cup pear juice
1/2 cup orange juice
1/2 cup firmly packed brown sugar (http://www.recipezaar.com/library/brown-sugar-375)
1/2 cup honey (http://www.recipezaar.com/library/honey-155)

Directions



Preheat oven to 375°F.
Place ham, cut end down, in a large baking pan.
Mix pear nectar and orange juice in a bowl.
Bake ham for 15 minutes basting frequently with juices.
Mix brown sugar and honey together in a small bowl. Brush mixture over ham and bake for another hour or until internal temperature reads 140°F.
Honey Baked Ham corporation uses a butane torch to caramelize the glaze to a crust. The ham is placed on top of a huge metal drum covered with foil and caramelized.

Nice SilverSage, that sounds real good! I talked to the wife and we have decided to give that a try this year.
