View Full Version : Creamy Bacon Asparagus Soup

6 strips of bacon-diced
1 small onion-chopped
1 t salt
1/2 t ground pepper
1/2 lb asparagus-chopped
2 c chicken stock
1/4 c heavy cream
1 Tbsp butter

In a large pot over medium high heat, saute bacon until crisp. Remove from pot with a slotted spoon and set aside.

In the leftover bacon grease, saute the onion until tender, about 5 minutes. Add the salt and pepper and stir to combine. Add asparagus and saute until tender, about 5 minutes. Pour in chicken stock and turn the heat to high. Bring to a boil and simmer for 10-15 minutes- or until the asparagus is really tender.Stir in cream, then add butter and stir til melted.
You can puree this in a blender if you wish.

Serve soup with a small handful of bacon on top.

That looks and sounds fantastic!

A few years back, I had some incredible asparagus tips made by a friend of a friend at a dinner party. I asked about it, and they said all they did was sauté quickly in butter with garlic.

I tried that and got crap! I think he held out on me as I’ve never been able to make Asparagus in such a delightful way.

But NOW, there is this recipe! I’ve got to try it! Thank you for providing a path for me to redeem myself when faced with asparagus! Can’t wait to do this!

Well thanks Keltin.
I cut the recipe in half because it's just me to cook for here.
The leftovers go with me to work tomorrow.
It's really good.
