View Full Version : Mini's Fish Stew

4 white fish fillets - I used pollock
2 leeks
1 tin tomatoes
1 tin sliced mushrooms
1 tbs dried parsley
1 tsp mace
1 small tub marscapone cheese
butter/margarine
salt


Sweat the sliced leeks in some butter.
Add the tomatoes and mushrooms and bring back up to boil.
Add parsley & mace.
Cube the fish. Add to the mixture and simmer until cooked.
Stir in the mascapone until all is melted.
When stew is back up to heat, adjust seasoning and serve.

Yum! Marscapone cheese, huh? Dunno I've ever had any...

I'm loving this one. When you say one tin of tomatoes, is that about the same as a 14 oz can of tomatoes?

Kimchee - If you've ever had tiramisu, you've probably had mascarpone cheese.

Cooksie - yeah I used a 14oz tin, sort of my standard tin.
