My son Nicholas has been asked to bring in a snack for his double geography lesson, their current topic is rivers.Any ideas on a relevant snack food we could make for him to take into school.

Not sure if this would qualify as a snack, but how about something that swims -- like tuna fish?

Make trailmix/GORP (Good Old Raisins & Peanuts) with Goldfish crackers etc.

Put the tuna (or whatever) on top of a piece of bread, serve them open faced and call them "river rafts". Or make some "canoe" shaped celery pieces, stuff with pineapple cream cheese and top with little carrot sticks for "paddles".
