View Full Version : Night Before Christmas Breakfast Casserole

8 slices of bread- with crusts removed
1/8 c margarine
1 lb fried sausage, bacon or cubed ham
8 slices Velveeta cheese
2 1/2 c milk
6 eggs
1/2 t dry mustard
1/4 c chopped onion
1/2 c chopped bell peppers (red and green)
2 c crushed corn flakes
1/4 c melted margarine

Spread 1/8 c margarine on bread slices and place buttered side down in the bottom of a 9x13 baking dish.
Layer whatever meat you'll be using (or a combination of) with the cheese.
Mix together eggs, milk, mustard, onion and peppers.
Pour over other ingredients in the dish.
Crush the cornflakes in a ziplock bag, then drizzle in the melted margarine-shaking to mix.
Shake out of bag on to top of casserole.
Cover and place in fridge overnight.

Preheat oven to 325.
Bake for about an hour.

I love these, I try a new one every Christmas.
After the kids are in bed and we are done wrapping presents (because procrastination is not for the weak!) I set up a casserole and some sticky buns to pop in the oven while the living room is being destroyed. :D

We love this casserole too, but the corn flake topping is new to me, sounds great!

Sure is good Suzi and Phreak!
Many years ago, I made 3 of these casseroles for Christmas morning.
Each had the different meat in them.
It's an old classic and so delicious.

Here's one I made a few weeks ago. It's made with sausage. I tear up my bread. Haha the pix aren't the greatest, I'm still trying to get the re-sizing thing on here...
