Someone just emailed this to me. Very cool!

But when I make mashed potatoes and potato salad, I use Yukon Golds and just leave the skins on.

I've heard you could do this for years from mothers and grandmothers galore, but I could never get it to work. Finally, I see the trick is to score the potato across the middle first. I'll be trying this again. Thanks for the bump Lee!
