BAKED CORN AND OYSTERS
2 cans of creamed corn or the equivalent amount of fresh creamed corn
1 1/4 cups crackers crushed (I use Club crackers)
2 eggs, slightly beaten
1/2 tsp salt
1/2 cup milk or cream (or liquid from canned oysters)
1/4 tsp black pepper
1 tsp sugar
1/4 cup melted butter
1 1/2 cup fresh oysters (you can use the canned but fresh are much better)
Combine all the ingredients. Pour into a greased 1 1/2 quart casserole dish. Bake at 375 F for 25 minutes. Be very careful not to overcook or the oysters will get tough.
