View Full Version : Quick Crab Bisque

1/2 c butter
1/2 c flour
1/4 t each salt and pepper
14 oz chicken broth
2 T tomato paste
2 c heavy cream
3/4 c sherry
1 lb jumbo lump crab meat

Melt butter in saucepan. Add flour, salt and pepper and stir constantly over medium heat until it thickens.
Stir in tomato paste, then slowly whisk in chicken broth and bring back up to a simmer.
Add cream and sherry, and whisk... bringing to a boil.
Stir in crab meat, lower heat and simmer about 10 minutes.

Mmmm this sounds good! I prefer chowders but the wife loves the bisques so I will have to make this up for her!

I too, prefer "lumps" in my soups, but for the Warden's sake, I make a cream soup or a bisque now and again........
This looks great; she'll enjoy it, I'm sure!
