Smoked Red Onions

I made smoked red onions a couple of times but saw on Emeril Green today a woman that is smoking them then packaging and selling them. I found it interesting in that they really are good as a topping on many things from salads to baked potatoes. She claimed the smoking process dehydrated them though I don't do them long enough for that to occur but never did think about dehydrating them afterward as I do with chipotle peppers.

She suggest using them like a bacon bit topping one would use. She smokes them to the point of dehydration then grinds them up and sells them. I might try dehydrating them in my dehydrator next time I smoke some. I like them smoked about 2 hours then dice them up for salads and such but never thought about keeping them long term.
