Had this last night.
Dip fish in egg, roll in instant potato flakes, fry.
Top layer are bluegills, second layer perch, third layer walleye.

Here's to the cook :beer:. It looks like the fish fried up perfectly with a very light breading, which I like.

I might add that the fish was delicious. I liked it better with the potato flakes than with panko or other bread crumbs but I guess I'll have to do a side by side to prove it to myself.

Buzz, did you use any seasoning in the spud flakes? The ling cod fillets in the freezer are calling!

Nothing was added to the potato flakes. Lightly whisk a couple of eggs, dip the fish, and cover with the flakes. Experience says if you wait about 30 minutes before frying the flakes will stick to the fish a little better.
